Chorizo with orzo and red pepper

Ingredients (serves 2)
1 medium red onion chopped
100g chorizo cut into small cubes
1 red pepper cut into strips
A cup of frozen peas
100g orzo (a cupful)
2 cups of hot chicken stock
2 tbsp parmesan
Method
Soften the onion and red pepper with the chorizo over a low heat for ten minutes, stirring to prevent sticking. Season with s&p.
Add the orzo ensuring it is coated and then add the frozen peas followed by the hot stock. Bring to a simmer and cook for about ten mins.
Keep an eye on it. It will need regular stirring. Just as it has absorbed most of the liquid throw in the parmesan and stir well.
