Lemon Cheesecake (No bake)

Ingredients
400g sweetened condesnsed milk
250g cream cheese
300 mls double cream
4 large lemons
12 low fat digestive biscuits cruched
80g butter
Method
Melt the butter gently and add the crushed biscuits. Mix well and press into a 7 inch loose bottomed flan tin. When cool refrigerate.
Soften the cheese with an electric mixer. Slowly add the condensed milk and then likewise with the double cream.
Roll the lemons well and then add all their juice gradually while whisking and it should all thicken.
Spread the mixture over the base as evenly as possible and refrigerate for at least an hour.
đź‘€ Winning combination of sweet and bitter. Shave some of the lemon peel over the top.
